PREP is Proud of our Finalists in the Flavor of Georgia Contest!

The annual contest, conducted by the UGA Center for Agribusiness and Economic Development, is a chance for food businesses to showcase their new products.

A team of food industry experts and grocery buyers rated the products on qualities including innovation, use of Georgia theme, market potential and flavor.

Governor Nathan Deal, Agriculture Commissioner Gary Black and UGA College of Agricultural and Environmental Sciences Dean and Director Sam Pardue congratulated the category and grand prize winners during Flavor of Georgia Day, part of Georgia Agriculture Awareness Week at the Georgia Freight Depot in Atlanta.

“We had over 125 products submitted this year and some of the toughest competition we’ve seen in the contest’s 12-year history,” said Sharon P. Kane, Flavor of Georgia contest coordinator. “The 33 products represented are truly the best of the best.”

PREP Member Olympus Greek Mountain Teas won best of category for beverages.

Other finalists included Tru Truffle White Truffle Oil,  and Meal Mate’s “Hollingsworth Butter Pecan Tart”

Showcase events like the 2018 Flavor of Georgia Food Product Contest help entrepreneurs spread the word about their products. Many participants have landed spots in regional and national grocery chains like Whole Foods, Ingles, Fresh Market, Earth Fare, Kroger and Harvey’s.

Category winners received an award and membership in the state Department of Agriculture’s Georgia Grown program, statewide notoriety and bragging rights. All winners and finalists earn the right to have their products stamped with the 2018 Flavor of Georgia logo. They also gain exposure to grocery buyers and food industry professionals who judge the final round of the contest.

Article in Voyage Atlanta featuring Doug Marranci Co-Founder PREP

Doug Marranci Founder and Director of Operations

Meet Doug Marranci of PREP Cook | Create | Connect in Spaghetti Junction

Doug Marranci Founder and Director of Operations

Today we’d like to introduce you to Doug Marranci.

Doug has been in the restaurant industry for 35-years. As a child he worked in his family’s food service business, and his passion for the industry followed him into adulthood. He has owned and operated seven restaurants in the Carolinas, and was involved in the conceptualization of numerous restaurant ventures, which ran the gamut from coffee houses to upscale Mediterranean dining.  After leaving the food service business to start a Real Estate Brokerage company.

In 2010, Doug was given the task of leasing a local commissary kitchen space, and quickly discovered that there was a large and growing demand in Metro Atlanta for commissary kitchen space and shared kitchen facilities. After hearing stories from disparate food producers who were unexpectedly put out of business due to changes in food service regulations, Doug devoted himself to sharing his vast store of restaurant operational and promotional experience to help this unsupported group of small food business owners.

After working on the business and plan for 2 years, Doug and his partner JR Santos met up with Mitch and Michele Jaffe, and after two more years of planning, PREP was born. PREP’s goal is to eliminate the barriers to entry in starting a food business, and to provide food business acceleration services and facility resources.

Has it been a smooth road?
There were many false starts while trying to launch this new business. We worked with other food facilities to provide operators with a place to produce, but the reality was that this project would need to be built from the ground up. Navigating the rules and regulations of the FDA, USDA, Georgia Department of Agriculture and State and County Environmental health was a daunting task that took more than a year to put together into a plan.

Bringing products to market is daunting for PREP Members, and Doug has helped these startup food companies partner with amazing growth opportunities.

So, as you know, we’re impressed with PREP Cook | Create | Connect – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
With a great food idea or concept, PREP makes it easy to get started in the food business. We handle all of the permitting with our Members, as well as reducing the financial barriers to starting a food business. We have helped accelerate more than 200 food businesses. We provide all of the resources necessary so our Members don’t have to re-invent the wheel.

PREP is one of the only food accelerators that are permitted by every food authority (FDA, USDA, GDA and Environmental Health). These authorities refer people to us when they call to get information. That is the one of highest compliments that could be given to PREP!

PREP has had many Members graduate and move on to their own production facilities. Many of our Members have been on Oprah’s Favorites list, and many have won national and international contracts based on operating at PREP.

Let’s touch on your thoughts about our city – what do you like the most and least?
Doug’s love for Atlanta stems from the vibrant food scene. From fine dining to chicken joints, as well as the Farmers Markets all over the area. There is a great mix of cultures in Atlanta, which makes the available ingredients in Atlanta is phenomenal.

There is nothing Doug loves more than sitting down 1 on 1 with PREP Members to work on business development. Even just the simplest ideas will turn into a wealth of resources to help these budding entrepreneurs grow their businesses.

Doug loves tenacity. The most fun people to work with have jumped into their business with both feet, and have a “can do” and a never give up attitude.

I imagine that many people answer this one the same, I least like driving around Atlanta. Rush hour is, well, always hour.

What a pleasure to meet Jasmine today and find out the rest of the story about the wonderful products.  Rich and delicious,  the “cheese” that was sampled was amazing.  One of the best parts of what we do is the “taste testing”.  Jasmine shared that she has been carrying this idea around for years.  Lots of development and tasting has happened.  Now with the help of the pro services included in the Essay Contest package, perfection is going to be a reality.

JR had the pleasure of making the phone call and hearing the anxious excitement when saying that he was calling from PREP.  The flow of emotions from Jasmine was evident, from the laughing, crying and screaming as the reality that his long awaited dream was about to come true!

Here are some excerpts from Jasmine’s winning essay:

“The guests were amazed that they could enjoy plant-based meals and not feel as if something was missing. They were very surprised that the “cheese” in the dishes was made entirely from plant sources and contained no dairy. We exclaimed “Anything you can make, I can make vegan”!

“After much experimentation, we whipped up a creamy, knees-buckling, eyes roll-back-in- your-head cheesy sauce to use in the plant-based versions of the meals”

“Our unique, patentable recipes will be the answer people are looking for. They are nut-free, so it is school-safe; diary free, so lactose intolerable people will enjoy; plant-based, so they are a healthy choice; and most importantly – taste amazing.“

“The world of vegan cheese has gotten so tasty that word is getting out, which means sales are going up. To be exact, they were up 22.7 percent in 2014 which translates to $30 million in sales.”

“Connected to the concept and practice of social responsibility and have an interest in green/eco-friendly lifestyle, eating clean, organic, vegan, vegetarian”

Stay tuned for the rest of the story!

A special thanks to everyone who submitted their essays.  There are so many ideas that are just ready to come to market, and the choice was a difficult one to make.

PREP thanks our sponsors for helping to make this dream a reality!

Find Locally Produced Specialty Foods – Candler Park Market

Atlanta Local Food Products

Local Specialty Foods made and sold in Atlanta!

PREP Atlanta removes the barriers to entry for entrepreneurs who want to start a specialty food business!

Today I had the pleasure to meet with Greg Hutchins and Robin Santos at Candler Park Market.

Recently I sent a request to Greg, one of the owners of the market asking for some time to get some advice and opinions on how a grocer feels about local specialty food products. I wanted to learn what they are looking for when selecting the right foods for the market.

My goal was to gain a better understanding so I could share this information with PREP Members.  I was thrilled when Greg wanted to know about PREP.  I could go on all day, however Robin actually gave a wonderful description of what we do here. being in the specialty food business herself!

Joining us was April Dubois with Mixte Cuisine.  April produces a wonderful artisanal flavored Ghee at PREP.

When going to the Market, I already knew that they have the best Deli sandwiches around! Mitch and Michele Jaffe, Partners at PREP visit the market often.

Greg and Robin shared with me that they love to choose local products.  Here are the to 6 areas that all local specialty food producers must be aware of in order to be successful.

  1. Consistency of product is most important.  Customers expect to buy the exact same product every time.
  2. Pricing must be realistic.  No doubt that producers want to make money, however keep in mind that purveyors need to make a profit in order to keep their stores open.  Producers can’t take the price they sell their products and expect the store to add on top of that.  If that small jar of delights ends up with a retail price of 18.00, it may never leave the shelves.
  3. Communication is the key.  Many people approach the stores with a wonderful product or idea, then are never heard from again.  Make sure you can not only run your production, but make plans to have help so you can do the marketing and follow up that is required.
  4. Consistent business operations are a must.  Set up great systems for communication with markets, calling the stores, receiving orders and fulfilling orders.  No shop owner wants to have to tell a customer that they don’t have the product today, and don’t know when it will be in. (Greg shared a story of a product that was promised last Friday. No delivery or communication 6 days later.
  5. How about some dedication?  Many small producers start out at Farmers Markets, then grow to local markets, then hopefully hit the big time.  When you go big time, don’t forget the retailers that supported you in the early days.  Make sure those who supported you early on are always well taken care of.   Karma is a really good thing!
  6. Be serious about building your business.  A hobbyist probably won’t be picked up by stores.  Producers have to have skin in the game.  Markets want to deal with professional folks who are looking to grow a serious business.  If you are starting a small business and want it to grow, it takes 110% of your time and focus.
  7. Be serious about your product.  Packaging and labeling are what sell products. Be unique and don’t skimp on great design.

Please go by and support local producers while you check out Candler Park Market.  Be sure to thank Greg and Robin for sharing a wealth of knowledge with us!

Garnish & Gather @ PREP Atlanta!

Garnish and Gather Meal Delivery

A visit with Emily and Abbie of Garnish & Gather

The best part of my work at PREP is when I get to interact with other business owners and entrepreneurs.  We have many wonderful specialty food producers at PREP, so I have been calling around trying to connect with local markets and businesses that market and or sell local specialty food products.

Garnish and Gather Meal Delivery

How nice when I received a return message from Emily Golub with Garnish & Gather.  The message was that she was excited about what we are doing and wanted to come and visit our place.  Today was the opportunity for that visit.  Emily came with Abbie Brans (Marketing & Communications (&Facebook!).

We actually recognized each other, and figured out that we had met about 4 years ago. Emily was just putting together the concept for G&G and JR and I were trying to figure out how to put together our community kitchen project.

Emily went on to build out her own facility and Garnish & Gather was born.

Garnish & Gather Grocery Specialty Foods PREPG&G has grown in many ways over the last few years. With the addition of the Local Grocery Market, a partnership with PREP was a natural. G&G is widely known for their wonderful Chef Inspired meal kits.  PREP Member Specialty Food producers need to be included in that lineup!

Everyone knows that when you run a business, you can easily get lost in the details.  I know without a doubt that PREP is a wonderful facility.  I can easily forget why I do what I do. A visit from creative foodie entrepreneurs like Emily and Abbie and their fascination with PREP brought back that warm feeling of why we chose the path of working with small startup food businesses.

Garnish and Gather Meal Kits, Meal PREP

G&G works with a local chef to create a menu and recipes.  Their package has all of the local, natural ingredients to make a dinner for 2 or 4.  As we toured PREP,  we walked past one of PREP’s Producers, Jason Jiminez, owner of Homespun Atl catering. Emily told me that Jason was a featured chef for a past G&G meal kit.

Jason is working on his new restaurant, Kitchen Six in North Decatur, and I am certain that there is an upcoming G&G meal kit featuring recipes from Jason and Kitchen Six!

jason jimenez of Kitchen Six Homespun Atl and

PREP is excited about our newly forged relationship, and the upcoming collaborations that are already in the works.  This includes featuring some of the Chefs that call PREP Home, as well as the upcoming launch of a meal kit featuring Food Truck Fare, with recipes from the best food trucks in Atlanta!

Be sure and take a look at the wonderful “Gatherings at Home” section.  Start with a meal kit, choose from fresh exciting add ons, and your party is ready to go!  You can tell everyone about G&G, or just pretend that you did it all by yourself.  The most wonderful part is that soon, you may find some specialty foods from our PREP producers in your bag!  Many of PREP’s members have gone on to open spaces of their own, and chefs often choose PREP as a space to experiment and hone dishes for their restaurant menus before opening a brick-and-mortar. Bellina Alimentari—the Italian restaurant and market inside Ponce City Market—developed many of their recipes and menu inside PREP’s shared kitchen. Queen of Cream, the popular Atlanta ice cream parlor that opened in Old Fourth Ward last year, started at PREP. Wanderlust, a cold brew coffee maker, has grown to offer small-batch cold brew to restaurants and grocers throughout Atlanta and in Birmingham, and the company is moving into a production space of its own.
