Have you been to see Julie D’Amico demonstrating wonderful food products and techniques on Thursdays at 1:30 @ PREP!

“Thrive Thursday” is an opportunity for me to cook up a few Gordon ingredients in the PREP kitchens to help share our product lines, inspire new trending or seasonal menu ideas and introduce our broker community–it’s a chance to share space and conversations with a variety of customers, learn more about their business and the types of products or ideas they might find interesting.  This time is invaluable for Gordon and PREP to continue our partnership and explore new ideas in the kitchen. Each Thursday looks a little bit different and it’s exciting to talk about new imported olive oils, applications for dips and sauces, Spring sandwich ideas, trending flatbreads–the list is endless and the conversation time is priceless.

Find Locally Produced Specialty Foods – Candler Park Market

Atlanta Local Food Products

Local Specialty Foods made and sold in Atlanta!

PREP Atlanta removes the barriers to entry for entrepreneurs who want to start a specialty food business!

Today I had the pleasure to meet with Greg Hutchins and Robin Santos at Candler Park Market.

Recently I sent a request to Greg, one of the owners of the market asking for some time to get some advice and opinions on how a grocer feels about local specialty food products. I wanted to learn what they are looking for when selecting the right foods for the market.

My goal was to gain a better understanding so I could share this information with PREP Members.  I was thrilled when Greg wanted to know about PREP.  I could go on all day, however Robin actually gave a wonderful description of what we do here. being in the specialty food business herself!

Joining us was April Dubois with Mixte Cuisine.  April produces a wonderful artisanal flavored Ghee at PREP.

When going to the Market, I already knew that they have the best Deli sandwiches around! Mitch and Michele Jaffe, Partners at PREP visit the market often.

Greg and Robin shared with me that they love to choose local products.  Here are the to 6 areas that all local specialty food producers must be aware of in order to be successful.

  1. Consistency of product is most important.  Customers expect to buy the exact same product every time.
  2. Pricing must be realistic.  No doubt that producers want to make money, however keep in mind that purveyors need to make a profit in order to keep their stores open.  Producers can’t take the price they sell their products and expect the store to add on top of that.  If that small jar of delights ends up with a retail price of 18.00, it may never leave the shelves.
  3. Communication is the key.  Many people approach the stores with a wonderful product or idea, then are never heard from again.  Make sure you can not only run your production, but make plans to have help so you can do the marketing and follow up that is required.
  4. Consistent business operations are a must.  Set up great systems for communication with markets, calling the stores, receiving orders and fulfilling orders.  No shop owner wants to have to tell a customer that they don’t have the product today, and don’t know when it will be in. (Greg shared a story of a product that was promised last Friday. No delivery or communication 6 days later.
  5. How about some dedication?  Many small producers start out at Farmers Markets, then grow to local markets, then hopefully hit the big time.  When you go big time, don’t forget the retailers that supported you in the early days.  Make sure those who supported you early on are always well taken care of.   Karma is a really good thing!
  6. Be serious about building your business.  A hobbyist probably won’t be picked up by stores.  Producers have to have skin in the game.  Markets want to deal with professional folks who are looking to grow a serious business.  If you are starting a small business and want it to grow, it takes 110% of your time and focus.
  7. Be serious about your product.  Packaging and labeling are what sell products. Be unique and don’t skimp on great design.

Please go by and support local producers while you check out Candler Park Market.  Be sure to thank Greg and Robin for sharing a wealth of knowledge with us!

We took a visit to East Atlanta Village Farmers Market looking for local gourmet Food Producers to begin production at PREP.

Gourmet Food Producers @ East Atlanta Village Farmers MarketPREP is the place for Gourmet Food Producers to get started when they are ready to bring wonderful locally produced products to market. While visiting the East Atlanta Village Farmers Market, we found a wonderful example in Mana in our Foods Coconut Curry Mix.

This is wonderful mix that you simply add water and cook. We enjoyed this wonderful authentic curry for dinner, and as suggested, added some chicken to the mix when we cooked it. What an authentic flavor! The folks at Mana Foods took a wonderful idea and made it a reality. No doubt you will be seeing their products in stores near you!

People are looking for foods with recognizable ingredients, and local sourcing foods is very important. Cost is a consideration since local production means no shipping across the country. Knowing where your food is coming from is also very important today.

Farmers Markets – Locally Sourced Foods – PREPatl

Atlanta Farmers Markets and Local Foods

Freedom Farmers Market – Atlanta – Locally Sourced Foods

By Doug Marranci

Today I visited the Freedom Farmers Market at the Carter Center on Freedom Parkway. There were more than 20 vendors with products ranging from organic produce, local cheeses, to black eyed pea caviar by our friends at Doux South!

Recently I attended a certification class at UGA for Food Processing Safety, and had the pleasure of meeting the guys from Doux South.    It was wonderful hearing about how they brought their wonderfully creative local foods to market.  Everyone wants locally sourced foods, especially foods with minimal ingredients.

Why Farmers Markets and Shared Kitchens?

Many of these local producers have built out thier own processing facility, as Doux South has.  There is a HUGE cost in outfitting your own commercial kitchen.  Most Atlanta farmers markets require that you operate in a certified kitchen in order to sell at the markets.  There is always the option of taking advantage of Georgia Cottage Foods regulations that let you produce in your home, and sell to very limited markets.  Then comes PREP!  With a membership at PREP, you can take advantage of our infrastructure and expertise.  Imagine getting started producing your famous pasta sauce or organic cookies and being able to sell them at Farmers Markets, local retail markets and Whole Foods!

Locally Sourced Foods

There is a great balance to the locally sourced foods that you see at farmers markets, you don’t have to pay to have them shipped (think carbon footprint) across the country.  There is a distinct freshness, and you can taste the love that went into the production and hand packaging of these wonderful local foods.

Everyone can’t get to these farmers markets to sell, or even to buy.  PREP is here get you up and running so you can sell your local products in markets, grocery stores and unlimited retail locations.

Entrepreneurial Spirit

Mostly what I enjoy is the connection to people for whom Food Matters.  Whether speaking with shoppers, chefs, young cooks and vendors/producers, there is such a feeling of energy that comes from engaging in a conversation with people who are passionate about food.  Our food supply is changing in big ways as huge food production plants are laying idle.  Small batch, hand production, locally sourced and with recognizable ingredients is what is happening Right Now! Are you ready?

PREP is opening in May!

If you are ready to get producing, PREP opens in May.  We are signing up members now with great pre-opening pricing.  Don’t miss your chance to get in on the ground floor of this state of the art commercial kitchen facility for food entrepreneurs!
